  • 2 lbs flat iron steak
  • 2 tablespoons black pepper
  • ½ cup olive oil
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon cracked dried green peppercorns
  • 3 tablespoons sherry vinegar
  • 2 finely chopped cloves garlic
  1. Mix the oil with the vinegar, pepper, herbs, and garlic and pour this marinade over the meat.
  2. Turn the steak to coat and let it marinade for between half an hour and two hours.
  3. Season the marinated steak with salt and grill it, basting it a few times with the marinade as it cooks.
